Preparation Method for Fried Rice Recipe:
The Cauliflower and Other Vegetables
Use a hand grater to grate the cauliflower, largest holes in the grate is recommended or you may also use a grating blade in food processor. Grated cauliflower should look like cooked white rice. Weigh out 10 ounces of the grated cauliflower (I had 4 good-size florets left for another use).
Chop the spring onion into small pieces.
You can also add carrot, Beans and any other vegetables you like.
The Eggs for Fired Rice
You can use scrambled eggs to add to your fried rice, but you may also go with an omelet – just cut it into thin strips before and then add to the rice. Some may like to add beaten egg to the rice while it’s frying, but this can make your finished dish to be turned out as a bit mushy.
Use of cold rice is recommended when making fried rice as the rice will keep its shape better and you won’t end up with a gluggy, mushy mess.
Cooking Method for Fried Rice Recipe:
If you have leftover rice from last day put it in a big bowl or if you are not using the leftovers then you need to boil the rice. To boil the rice first rinse it with water 2-3 times until waster has turned translucent. Now put rice in a rice cooker and add 4 cups of water, when it is half cooked, which should be done within 10 minutes, Remove the cooker from the heat and. Keep it aside to let it cool for a few minutes, which should be let’s say about 10-15 minutes.
Take a saucepan put some oil into it and leave it to heat for 2 minutes. Oil should be enough to cover the bottom of a very large skillet on medium-high. Fry onion till it has turned golden brown, watch closely so as not to burn. This process should be done on low, to medium heat.
Now, add the vegetables, cauliflower or whatever you may like to add to your favourite fried rice recipe; let it fry for about good 4-5 minutes, keep it stirring constantly until it begins to turn golden in colour. Over cooking will make it mushy. Add ginger, soy sauce, sesame oil and the meat (if you want) and again keep flipping and stirring. Stir-fry until somewhat browned. All the ingredients should be fried well, but ensure not to burn them.
You can serve it immediately or it can be reheated for later use.
Serve with tomato sauce or Manchurian whatever is your preference. Also, you can try it with some other gravy as well.
Cook your rice one day before you want to cook fried rice and place it in the fridge. If you use freshly cooked rice you won’t get the right texture and there will too much moisture. Do not forget to give lots of heat to your rice.
